Day 32 - Italian Meatballs


Italian Meatballs with tomato sauce and fresh bread.

These were so tender. I got the recipe from the Food of Italy cookbook. They had sauted onion and pine nuts and a bit of garlic, mixed up with pork and veal mince, an egg, some panko breadcrumbs, a load of lemon zest, some ricotta and some parmesan, pan fried. Then the sauce is just a tin of tomatoes and a bit of red wine seasoned and simmered to reduce, finish cooking the meatballs in the simmering sauce - done! I also made Silvias No Knead bread which turned out really well again. We had a slice to mop oup the leftovers and toasted the rest for breakfast this morning.
